How do I put 'Vertical Synchronizer" off in Linux... All damn games laggs
etc. Quake2+mods, Quake3 and Doomsday.

Not at my linux box right now, so I'm not 100% certain... but try
nvidia-settings
(or nvidia-configure, or something like that ) that is if you're using an nvidia card, if not, I don't have a clue.
The setting you'd want to change is "sync to vblanc" for opengl, I'd say that this is by default off. I use sync to vblanc because I feel my aq2 performance in linux got lots better with it on.
Oh, and you need to set this every time you reboot (there was a switch that you can use to just load your settings and add that to your startup script... try nvidia-settings --help...)

vsync (or sync to vblanc) just means that the FPS will be synced with the refreshrate of the monitor... so if you're using a reasonably fast refresh rate on your monitor, the only thing you should notice when turning it ON is that it will be smoother... lots smoother... I myself use 102Hz @ 1152x768 in linux, so I can't say my FPS are too bad (also 102)
AA and other image enhancing options will decrease your FPS to produce a better quality image. Don't confuse the concepts here, because VSYNC and AA doesn't have anything in common
